What is sourdough?

Sourdough can replace yeast, the only difference is that it doesn’t rise commercially but it rises with a “starter”, meaning that it had time to grow and develop itself throughout it’s life, like humans. The older your sourdough becomes the more character it gets.

When to use it: I usually use it to make my homemade bread, but I use it for other things to, Hamburger buns, Pizza dough, etc.

Is sourdough healthier than yeast?

It is said that, sourdough is richer in nutrients, less likely to spike your blood sugar, has less gluten in it and it’s easier to digest it than yeast.

Qu’est-ce le levin?

Le levain peut remplacer la levure, à la seule différence qu’il ne lève pas commercialement mais qu’il lève avec un « début », c’est-à-dire qu’il a eu le temps de grandir et de se développer tout au long de sa vie, comme les humains. Plus votre levain vieillit, plus il a de caractère.

Quand l’utiliser: En générale je l’utilise le levin dans mon pain fais maison, mais je l’utilise aussi pour d’autres choses, les petits pains d’hamburgers, la pate a pizza, etc.

Est ce que le levin est plus sain que la levure?

On dit que le levain est plus riche en nutriments, moins susceptible de provoquer des pics de glycémie, qu’il contient moins de gluten et qu’il est plus facile à digérer que la levure.

– How to make your own homemade bread

500gr Bread recipe (with sourdough):

  • 400gr Spelt flour
  • 100gr of sourdough
  • Water
  • 1 Teaspoon of salt

Take a large bowl, put in the flour, the salt and the sourdough, mix it together. Add water and knead the dry ingredients until a dough is made. Leave it to rise under a wet towel. Heat the oven at 180°c, take a dutch oven (or something else with a lid) spread butter and flour in the inside, put in your raised dough. Place the dough in the oven with the lid on for around 30mins, then take off the lid and place it back in for an other 30mins. When cooked let it cool down.
